Helloooooo! I feel like I’ve been missing you all as I’ve only posted on haveyoubeenhere for the last week as we have already been on our road trip for 9 days.
This morning I was missing my smoothies so much and we don’t have a NutriBullet or blender with us, so grabbed all the fruit and made a beautiful Summer Fruit Salad.
My fruit supply was limited to naartjies, which you might call mandarins or clementines. And then I also had a few golden delicious apples, seedless white grapes and a banana.
I chopped them all up into small pieces and tossed them in a bowl. I usually add a touch of fruit juice of some kind over the top as I find it prevents the fruit from turning brown once it’s refrigerated. All I had was Litchi juice, so add that to the mix and the effect was wonderful!!! A throw back to our ebbing Summer here in South Africa.
I quickly made some cooked roasted granola, added the fruit salad and my late breakfast was fabulous!!!

The road trip has definitely messed with my routine and I can feel it in my lack of energy and lethargy. Hopefully with a few diligent days I can get back on track. It just really difficult to eat healthily when you’re not at home and we still have another week away.

You can check out my travel posts if you’re interested, we’ve done a few very beautiful hikes and walks, so the exercise is still on track. I just need to kick the healthy eating back into gear.
