I made this salad a few days ago, mostly for my husband. And it was a big hit because he loved it! I think this salad is just perfect for men because it has in it ingredients that in general, men like: bacon, cheddar, onion and the broccoli is the top ingredient that provides nutrition and balance to this meal.
Ingredients:
- one broccoli
- 200g bacon (or you can replace it with pancetta)
- one onion
- pine nuts
- cheddar
- your favorite dressing
- salt and pepper
For this salad's dressing, I used a bought one. I don't always make my own dressing. Sometimes I don't have time for it or I simply like the dressing I find in the store.
For example, I like this dressing I used for this salad. You can make a homemade version of it, if you like. I think its flavor is just perfect for this Broccoli si Bacon Salad.
The ingredients on the label are these: rapeseed oil and cold pressed rapeseed oil, wine vinegar, white wine vinegar, Dijon mustard, sugar, garlic puree, salt, lemon juice, chives, parsley, black pepper.
It's not my original recipe. I got inspired by one I found on Pinterest. Here's the original, maybe you like it more.
Instructions:
The original recipe had raw Broccoli in it but I'm not a fan of raw broccoli. So I scalded it for 3 minutes. I let the broccoli in a colander for a few mintues (to cold), and then it has to be chopped in small peaces, like this.
In the same time, I did the bacon. You just have to put it in a pan for a few minutes (no oil added), and let it to brown 1-2 minutes each side, until its crispy.
Next, cut the bacon, onion and grate the cheese. Or you can grate the cheese in the beginning.
Add all ingredients in a bowl, add dressing and mix everything. Garnish with salt and freshly ground pepper.
Serve it immediately. Else the bacon will get greasy. But I think this salad is that kind of salad you can make and keep it in the fridge for a day. I'm not sure, but in this case this would be great. I like to find healthy meals that last longer in the fridge (if they last one day is JUST perfect). Sometimes its life saving to have a healthy meal in the fridge don't you think?
If you make this, it will take you only 30 minutes. Now I'm thinking that maybe some mango or pineapple would also bring great texture and flavour to this salad.
