I cooked some kidney beans, like I always do at least twice a week, but I thought Is should try something different and look for some recipes with beans and I found this very cool idea of making a bean burrito bowl.
It really was supposed to be black beans, but because I already cooked the red kidney beans, I thought, I can just use them instead.
I have never tried black rice before, so this was something new to me, but it actually turned out pretty good and it is so much healthier than regular white rice.
I am that kind of person, that don't really rely or use lots of recipes, I just like to find ideas and just do it as I go and to my taste and so this was the same thing.
I added some corn to my beans.
Cooked some black rice, which I was quite nervous about.
Shredded some lettuce, green onion and cilantro.
Cut some tomatoes.
And made some guacamole which really was just avocados and some lemon juice from fresh lemon and some lemon essential oils and some salt.
I also added some salsa and sour cream on top with the guacamole.
And this was our delicious dinner. I will be making these more often since this is a really healthy and delicious dish, but I will try it with some black beans instead.
