The Ginataang BILO-BILO "Filipino Sweets"

One of the favorite food of my children's is what we called GINATAANG BILO-BILO. This kind of food GINATAANG BILO-BILO are very famous in any province in the Philippines but each place has their own style of recipe and cooking ability. GINATAANG BILO-BILO soup is made of coconut-milk with 1 cup of sugar to make it sweet, more than 1 cup is not healthy.

Other places like "Batangas", their style and the name is different, they called it "PININDOT". This kind of food is made only of glutinous rice, coconut-milk, and sugar. Sometimes they include the ripe Jackfruit but it depends to their taste if they like it or not? Glutinous rice circle are like at the image above with color white and purple.

## GINATAANG BILO-BILO RECIPE and PROCEDURE ##

1. GLUTINOUS RICE - 1 1/2 CUP and 1 cup of normal temperature water. Combined in a bowl and mix it well. For the purple color, I did add Ube Jam instead of coloring food in a separate bowl. After combining all, take 1 small pieces using spoon or spatula and roll it, make a circle in your palm then set aside in a plate.
2. CASSAVA BANANA - peel and cut into small cube and put into a bowl of water to avoid black color and the oily skin then set aside.
3. SWEET POTATO - the same with banana, peel and cut into small cube and put into a bowl of water to avoid black color and removing the small resin.
4. COCONUT MILK - extract the first juice using 1 cup of normal water after squeezing in a bowl and set aside. The 2nd extract must be 2 to 3 cup of water direct to the big pot and let it boil. Then pour the 1 cup of sugar and stir until it melts.
5. If the coconut-milk is boiling, pour first the SWEET POTATO after 5 minutes put the CASSAVA BANANA. After 3 minutes next is the GLUTINOUS RICE and stir gently and slowly and leave it for 5 minutes more.

Done! If you want to add SAGO or Tapioca? You can add as I did... Only Asean's knows about the pearl. LOL

These sweets is one of my favorite food 2nd is the HALO-HALO or in English is Shuffle Shake. But what I really miss in the Philippines is that what we called TAHO! TAHO is a Filipino sweet treat consisting of TOFU, Sweet Syrup Sugar (Arnibal), and Tapioca Pearls(Sago)!

Here is the TAHO looks like. Visitor from the other country "Tourist", they did try the TAHO and they really love the taste, especially the Americans, Koreans, and the Japanese people, they like it! Only in the Philippines you can found the TAHO. Nothing more and nothing less, only in the Philippines. LOL

oooppsss..... My blog is all about GINATAANG BILO-BILO and not the TAHO. LOL Just sharing my favorite food that I miss. LOL

If you'll notice, I love sweets but not so much sweets and not all sweet food, a chosen sweet food only especially without vanilla.

Day 741 | Yo-Yo Effect

I started a challenge of taking 100 days off to mainly focus on my health and overall personal development and used this account as a personal blog to keep track of all my activity. I enjoyed it and continued afterward trying to build better habits and find a good balance between health, fitness, work and my personal life....

I continue to switch between doing everything good according to plan and having relapses switching letting my more impulsive core drives take over. The past few years while keeping these daily tracking blogposts this has imporved tremendously though and the 'downtimes' have shortened by a huge amount also always keeping my weight in check while being way more active and healthy in general.

I haven't been able to find the magic cure to just do what is objectively best without experiencing a choice which is my ultimate goal. The last few days I've been eating a bit more unhealthy but luckily haven't really added much of the lost weight back. It's a new week so I will be starting with fresh ambition and motivation to keep plowing away at it.

Gluten free, Multigrain and Vegan cookies.

**There are hundreds of varieties of cookies all over the world. Anyone can bake their cookies in their own way with different ingredients. Being a vegan I used to try different types of cookies by changing different flour. Even though wheat flour cookies are the most popular and sweeter in taste due to its gluten content, but many people are conscious to have gluten and limit their gluten intake. Some are allergic to gluten so avoid gluten. Here I tried to give a healthy touch to my cookies by making it gluten-free, vegan and multigrain.** ___

___ ### Ingredients Sorghum flour 250 gm Gram flour 250 gm Oats flour 50 gm Powdered sugar 180 gm Vegetable oil (I use Rice Bran oil) 270 gm Baking powder 2 tsp Salt 1/2 tsp Cardamom powder 1/2 tsp Vanilla essence/extract 1 tsp Papaya cherry 150 gm(completely optional) Water 45 ml ___ ### Procedure ##### Dry mixture Mix all three flour, baking powder and salt. Pass this mixture through a sieve. ##### Wet mixture Take oil in a vessel and add powdered sugar, cardamom powder, vanilla essence/extract and water. Mix well using hand mixer till it becomes a smooth and thick paste-like consistency. - Now add the powdered mixture in the wet mixture and make a smooth dough, either using a hand mixer or by hand. - Add papaya cherry at this step. - Allow it to rest for 15 minutes.

- Make cookies of your desired shape. - Preheat the oven to 180 degrees and bake cookies for 20 minutes. (Cooking time depends on the thickness of the cookies, so adjust according to that by checking in between.)

Chia seeds pudding!

If I start telling the benefits of chia seeds, I won't stop. But let me tell you some of it. - it has a lot of fibre. - it helps in weight lose. - it prevents cancer. - it is high in omega 3. - it is high in antioxidants Basically it have every single thing that you need. So you can take it in numeral ways, sometimes I like to have it as my breakfast, as a pudding.

It is colourful, it is yummy and it is healthiest. **How to make it? ** Take about half or half and a quarter cup of milk, take any milk, coconut almond any. Add in about 5-6 tbspn of chiaa seeds and about a tbspn of honey. In another small bowl, add in 2 tbsp of cocoa powder and 2 tbspn of milk, stirit well and add it to the chia seeds mix. Keep it in the fridge overnight or you can also keep it for 2-3 hours if in hurry. Top up with some seasonal fruits and some mixed seeds for the crunch. And a spoonful of peanut butter. It all add extra Nutrition. Enjoy and stay healthy.
