The Ginataang BILO-BILO "Filipino Sweets"

One of the favorite food of my children's is what we called GINATAANG BILO-BILO. This kind of food GINATAANG BILO-BILO are very famous in any province in the Philippines but each place has their own style of recipe and cooking ability. GINATAANG BILO-BILO soup is made of coconut-milk with 1 cup of sugar to make it sweet, more than 1 cup is not healthy.

Other places like "Batangas", their style and the name is different, they called it "PININDOT". This kind of food is made only of glutinous rice, coconut-milk, and sugar. Sometimes they include the ripe Jackfruit but it depends to their taste if they like it or not? Glutinous rice circle are like at the image above with color white and purple.

## GINATAANG BILO-BILO RECIPE and PROCEDURE ##

1. GLUTINOUS RICE - 1 1/2 CUP and 1 cup of normal temperature water. Combined in a bowl and mix it well. For the purple color, I did add Ube Jam instead of coloring food in a separate bowl. After combining all, take 1 small pieces using spoon or spatula and roll it, make a circle in your palm then set aside in a plate.
2. CASSAVA BANANA - peel and cut into small cube and put into a bowl of water to avoid black color and the oily skin then set aside.
3. SWEET POTATO - the same with banana, peel and cut into small cube and put into a bowl of water to avoid black color and removing the small resin.
4. COCONUT MILK - extract the first juice using 1 cup of normal water after squeezing in a bowl and set aside. The 2nd extract must be 2 to 3 cup of water direct to the big pot and let it boil. Then pour the 1 cup of sugar and stir until it melts.
5. If the coconut-milk is boiling, pour first the SWEET POTATO after 5 minutes put the CASSAVA BANANA. After 3 minutes next is the GLUTINOUS RICE and stir gently and slowly and leave it for 5 minutes more.

Done! If you want to add SAGO or Tapioca? You can add as I did... Only Asean's knows about the pearl. LOL

These sweets is one of my favorite food 2nd is the HALO-HALO or in English is Shuffle Shake. But what I really miss in the Philippines is that what we called TAHO! TAHO is a Filipino sweet treat consisting of TOFU, Sweet Syrup Sugar (Arnibal), and Tapioca Pearls(Sago)!

Here is the TAHO looks like. Visitor from the other country "Tourist", they did try the TAHO and they really love the taste, especially the Americans, Koreans, and the Japanese people, they like it! Only in the Philippines you can found the TAHO. Nothing more and nothing less, only in the Philippines. LOL

oooppsss..... My blog is all about GINATAANG BILO-BILO and not the TAHO. LOL Just sharing my favorite food that I miss. LOL

If you'll notice, I love sweets but not so much sweets and not all sweet food, a chosen sweet food only especially without vanilla.
