When it comes to sauces, my favourite mixtures are definitely tomato-based. One of the reasons is that I thrive on the low-fat lifestyle and tomato sauces make it so easy to be low in fat and still super delicious.

And once you have a base recipe that you love, it’s a lot of fun to experiment with different herbs and spices in there to add more excitement to your dinner meals. Since I am in Mexico right now, I love to use chipotle in my sauces - like this delicious marinara sauce.

For dinner, I made a big raw vegan salad to go with it - grated broccoli and carrot, cucumber, tomatoes, zucchini noodles, lettuce, nori and cilantro. So good!!

Here comes the recipe...

Chipotle Marinara

(recipe for 1-2 portions)

4 tomatoes
3 medjool dates
2 garlic cloves
2 tbsp lemon juice
1 tsp onion powder
1 tsp paprika powder
1/2 tsp chipotle powder

Simply put all ingredients into the blender and mix well.

You might want to add a little less or maybe even more chipotle powder since they vary greatly in their spiciness. Simply add everything to the blender and mix until creamy.

Have a vibrant day, everyone!
