I share information about this herbaceous plant of high nutritional value, which I grow in my garden, in pots. It is a species, excellent ally in the preparation of my meals, infusions and drinks. It is also an immunological phytoactivator because it is a powerful antioxidant.

This plant came to my garden a few moons ago when I planted part of a rhizome I had bought to season a rice with vegetables. I love rice with ginger.

It took many moons for this plant to develop in a pot. That allowed me to start to be very aware of it and by being so close to it permanently, I could realize that the smell of its foliage is identical to the smell of the rhizome we usually use. Consequently, I began to use the fresh leaves of the ginger to prepare my rice with vegetables and spices. I must tell you that the taste is spectacular. In many references I have been able to read that the leaves are not used from the plant. I assure you that they are and the taste is genuinely exquisite.

It is a rhizomatous herbaceous plant that can be cultivated in many areas worldwide with the specific condition of the climate, which must be tropical climate, avoiding low temperatures. It belongs to the family Zingiberaceae. The plant can reach a height of up to one meter approximately; its underground stem, a horizontal rhizome very appreciated for its aroma and spicy flavor. The leaves are sheathed lanceolate. Irregular, greenish flowers, grouped in dense spikes. Its origin is in Southeast Asia. It was one of the first spices exported from the East. It is a millennial spice that has been propagated its culture and use due to the kindness of its rhizome as much in the gastronomy as in the natural medicine. In Coctelería Tropical it is a stellar guest. I love cocktails with a touch of ginger. Its rhizome has extraordinary nutritional benefits due to the presence of polyphenols, flavonoids and tannins that have antioxidant properties. It also has vitamins, minerals and aminoacids.

I use the rhizome of Ginger in the preparation of my meals and I can even add ginger to the cooking of my chocolate. However, I must point out that the fresh leaf, before the flowering process starts, is exquisite in taste as well. In a future publication I will share one of my dishes in which the guest is the ginger.

In the dry period, in my garden, I grow ginger in two pots so that I can use the leaves and get the rhizome to develop.
