Hello friends!! Maintaining a healthy diet that includes fruits, vegetables and grains is an essential factor in keeping our body healthy. Today I want to share with you a recipe that I usually make, to friends and family summers and they like this delicious recipe, lentil and vegetable soup, it is very easy, nutritious, tasty and substantial.
The lentil has high nutritional value, it is rich in vegetable protein, vitamins, iron, folic acid, calcium, potassium and phosphorus, and it is also economical. You will need the following: • 250 gr of lentils • 1 large zucchini. • 1 medium carrot. • chopped mushrooms (optional) • Diced vegetables (pumpkin, sweet potato, celery, squash). • Chives and 1 small chopped onion. • 2 peppers. • One teaspoon of paprika. •Salt. • Pepper (to taste) • 2 tablespoons of oil • 2 and 1/2 liters of water. Process: First we must clean the lentils and put them in a pot with the 2 and 1/2 of water until they speak, add the chopped vegetables. Next, chop onion, chives and chili peppers and add to the pot, then add salt and pepper.
When the vegetables are soft add the chopped vegetables in the pot and let all the ingredients integrate, add the tablespoon of paprika, and adjust the salt and pepper, I turned it off and let it rest so that the flavors intensify
