Vegan Strawberry Banana Pancakes (Last Of This Summer Season)

# Hi Foodies and Vegans, Strawberry season is done/over. 10 days ago i bought the last ones from Karl, the "Strawberry Godfather" ;), and did those Strawberry Banana Pancakes last week.

# Ingredients: 3/4 bowl of spelt flour 2 big spoons of Coconut flour 1-2 spoons of Xylit (instead of sugar) 1 Banana Sunflower Seeds About 10 Strawberries Water and some rice milk

# Stir it,stir it, stir it... First the flours, xylit and water/rice milk. Then add the fruits and keep on stiring until you reach a nice texture of the dough. The coconut flour sucks up a lot of water, please take care and replace max. 20% of your "normal" flour with coconut flour. Anything else doesn't come out too good :p

# Place your pancakes in the pan Coconut oil fits the best for frying fruits, and because we used coconut flour already. Make sure to control the "non sticking" and don't be surprised if it gets a little redish inside your pan ;) because the strawberries lose some water while frying. Turn them at the right time, best if you see that the frying side is golden brown/redish :p But wait....

# Place the sunflower seeds on the raw dough side, and then turn them and fry the sunflower seed side until that one is golden brown and ready. Yummy, yummy :)
