Welcome to this second curation post for the ecoTrain Vegan Cooking on a Budget month. Week 2 has been very busy and there have been some amazing recipes shared! I'm pleasantly surprised to see so many recipes that i have never seen before, which is just what i had hoped for. In fact, these recipes are so good that I am going to compile a recipe book at the end for us all to download and share and inspire. What makes these recipes all the more valuable is their simplicity and of course low cost to make. Vegan cooking doesn't have to be difficult, and certainly dont have to use specialised or expensive ingredients. In fact some of the best recipes are the most simple, as you will see as you scroll through this curation.

Thank you to everyone who has taken part so far. Its clear you have all put a lot of love and time into these posts, which makes me very happy that most recipes have received beautiful up-votes from the ecoTrain as well as the OCD Community Initiative. A hearty congratulations to all of you who have received this support, i know it inspires many of us to keep posting and sharing!

So, today..I want to share the recipe for making Red Quinoa Pickles with cucumber and carrots. I like the spicy taste, so I add a few chilies and a fresh ginger aroma.

Today I want to share with you the recipe for my delicious and 100% natural homemade tomato sauce ... generally commercial tomato sauces have many additives that are not very healthy, that's why I always buy fresh tomatoes in the market and in a few steps I prepare this sauce that you can store to use in all your culinary creations.

One things that is very popular among the Indians are the age old Pickle Recipe. And the best one and popular is Mango Pickle.

Mango pickle is a traditional Indian condiment,made with Raw Mango, Spices and Oil.

Be it any home, Pickle making is very common and Pickle forms an integral part of all kind food menu. May be that is one of the reason that Pickle making is one of the age old legacy that keep inherited from one generation to another.

The translucent Mango and the flamy Chilli make the best accompaniment to any meal.

From Grand ma, to Mom, to wife or to sister, you can find the trend of pickle making quite popular. Afterall it gives a tangier taste to your food and helps it taste better. And Indians do love to have some spicy stuff with their food.

Taking a leaf out of the traditional home made Pickle making, I am Sharing our mango pickle recipe that is common in our home.

I like experimenting in the kitchen, adding a new ingredient, or mixing some random things, you need to get creative when you practice dumpster diving! And I do that, a lot. While here on the ecoTrain community is Simple Vegan Cooking On A Budget Month, I have my own Freegan August. I decided to spend no money on food for the entire month, and I'm pretty consistent with it.

After my last recipe for baba ghanoush, I've got for you another simple and cheap vegan spread (or dip if you will). Today I made 100% freegan guacamole. It takes around 25 minutes to cook it.

One of the things I hated as a child was the soups or creams of vegetables, it was complete torture to see my mother preparing them, that day I saw her preparing them was fixed that I did not eat hahaha, because I preferred to stop eating than even try a vegetable soup. With time things changed and for a long time and for health reasons I had to learn to eat them again, and the truth is that I love them now and every time I can prepare them.

A good cream of arracacha and pumpkin is an excellent starter and sometimes I prefer it as a main dish because a good portion of this would leave you very satisfied, also has a lot of nutrients to provide our body, for its part, the pumpkin gives us a good amount of beta carotene and antioxidants and arracacha contains iron, vitamin C and B3, are great for preventing cardiovascular disease and together they give us a sweet taste that accompanied by the right spices have an explosion of flavors really delicious.

Come with me to show you the garden and what I've been working on today 😉

It's mid August, the time when you harvest most of the vegetable. This year we're late with everything as we were stuck in the city during the lockdown, thus many of the veggies are only ripe now. No worries, better late than never and we're still grateful for what we get, even if it's just 30% of what we used to in other years.

We're lucky to have some wonderful neighbors who helped us a lot during the lockdown and and still helping every way they can as they have plenty and they are generous. People like them don't grow on every tree.

Today was the day to harvest tomatoes and make tomato sauce for the winter. It's the best period of the year as we get to enjoy the fruit of out work and the fruits mother nature gave us this year.

As part of "Simple Vegan Cooking On A Budget Month" and simply for breakfast;) I decided to cook a delicious porridge with almond milk, pear, banana and blueberries.

How to do this?

I pour 250 ml of almond milk (i.e. a glass) into the pot and add 4 tablespoons of oat flakes. I bring the milk to the boil. While the milk is boiling I added a pinch of salt. I cooked it with oatmeal for 2 minutes, stirring, and then left the porridge in the pot for another 5 minutes.

Anything on bread is generally a winner in our house. Though since plastic aware July we haven't been buying bread and this is my first attempt at making pita bread. I found a good 'mix-in what you want' (or have in the cupboard) burger ratio guide.

Everyone has their own version of "beautiful Sunday". My version this time comes from the produce of my organic garden.

I don't harvest all my vegetables. I leave a little in my garden. There are vegetables that are already in the flowering stage.

Casabe comes from cassava, one of the favorite tubers in my country, Venezuela, it is a very tasty and inexpensive food that is made by hand in some states; In addition, it does not contain gluten, contains fibers and is rich in B vitamins that help protect the metabolism.

I am lucky to live in the east of the country and here it is practically a tradition to eat it daily, it is easy to buy in any supermarket, it is the ideal substitute for bread for our daily diet, it is even used a lot as a snack at parties and family gatherings. like the "Pyre of the Eggplant" the flavor is delicious!

Simple vegan cooking is a kind of lifestyle I had been through since my childhood. Our parents raised us up with organic foods from our own harvest. This is one of the advantages of living in a rural place. Our vegetables grew without any pesticides. Yes, we used seasonally a fertilizer. Even our fertilizers were made up of grass decomposition mixed with goat or pig waste. I remember, we burned it in a composed pit.

Checking the @ecotrain community made me happy. I loved all the themes with the question and easy for me to jot down some real stories about myself.

Since today is about cooking budget vegan meals, I would like to share how I cook the pumpkin with leafy vegetables and coconut milk.

Kadhi-Lapsi, a traditional Indian Cuisine: ecoTrain Simple Vegan Cooking On A Budget Month!

Kadhi-Lapsi (कढ़ी-लापसी) is a unique combination. Kadhi is sour and spicy recipe while Lapsi is a dessert. When both are eaten together it gives a unique flavour which you only can enjoy by having this. It is a Traditional meal of Rajasthan state of India

Kadhi

It is a type of curry prepared by curd/lemon juice/dry mango powder and gram flour. Traditionally dairy curd is used but I prepare it with either vegan curd like peanut/soy curd or lemon juice. Pakoda(fritters) are also added in it to make it more delicious.

Lapsi

It is a dessert (broken wheat porridge) usually prepared in Rajasthan and other state of India on any auspicious occasion like marriage, house inauguration etc. It is prepared by broken wheat and jaggery/sugar.

Boy do I have a treat for you, if so. The ultimate usage of a watermelon (which is so perfect for Summer but also enjoyable right through Winter). Yep, this following recipe is not just affordable but last good, half a year at least, when stored properly in the fridge, and even more months when pressured-canned.

Watermelon is an awesome fruit that is packed with vitamin C, juicy and pretty in colors. This is a fruit that you can enjoy every piece of. And did you know the sweetest watermelon is the yellow kind? 😋😋😋😋

The flesh of watermelon is perfect for breakfast, lunch, dinner, whenever. The seeds can make great snacking. And the skin? Yep, it's edible too, and it is what I will be focusing in sharing today.

I brought you an excellent green juice, I reached it because of stomach problems, after trying this recipe, I felt relief. It helps speed up the digestive process.

Also, parsley is a diuretic by nature and contains enzymes that help digestion, so it helps the kidneys. When you take lemon and cucumber it has a vitamin C content

First get a cucumber, a lemon, fresh parsley leaves and a glass of water

Yesterday i have shown you home made sweet known as Kalakand and today i will show you one another sweet locally known as Besan ka Ladoo(बेसन के लडू) a very famous ladoo here in India. This ladoo mostly being used to offer to God in temples or any home base worship.

As you can see on above images there are Ghee(Cheese), CardamomCloves and Gram flour (Besan). These are the ingredients' which are necessary to make gram flour ladoo at home. These are basic requirements.

DAMN I'M HUNGRY NOW! LET ME KNOW WHICH ONES ARE YOUR FAVOURITES...
