# Gluten Free, Guilt Free
Making pancakes for breakfast is going to cost you in terms of calories and sugar intake! Not to mention how unhealthy it may be. With these coconut flour gluten free pancakes, not only are the calories superbly low, but it is quite nutritious with high fiber, low carbohydrates, high in protein and other nutrients! It is basically a win win situation and perfect for weight loss and those who have celiac disease or gluten intolerance. My girlfriend is gluten intolerant and this is perfect for her but I feel like I've used this recipe more for me when I was on a journey of weight loss and healthy eating. The best thing is that it doesn't leave you feeling lethargic and sluggish after shoving down a few! # Recipe Time! The recipe is quite yielding as you only need like a quarter cup of coconut flour and so the flour lasts a very long time before you need to buy more. 1/4 cup Coconut Flour 1 tsp baking powder 1 pinch of salt 2 tbsp honey or any sort of sweetener 2 tbsp coconut oil 1 tsp vanilla essence 3 eggs # Let's Make Some Pancakes!
Add your coconut flour, baking powder and salt to one bowl followed by the mixing of the eggs, honey, oil and vanilla extract in a separate bowl.
Once combined, add the we ingredients to the dry ones and mix thoroughly until homogeneous as shown below. I recommend using a spatula because the batter tends to get stuck in the whisk and it gets messy really quickly.
# Heating Things Up This part is a little tricky but not hard. It just takes a little patience a good eye. You will realize that coconut flour is completely different in characteristics than conventional flour and so it must be handled differently as well. Normal pancake batter can flow out into a pan and spread for itself. This does not. You must scoop the batter and spread it on the pan yourself! So once your pan is heated on low heat, proceed to scoop in and spread your batter in a pancakey shape, or whatever shape you like! Hey! I'm not going to judge you!
Another thing too is that with normal pancakes, you can tell the first side is done when bubbles form but with this, there is no such thing. You can however see when the edges at the bottom become a bit brown and that's how you know its time to flip. You must be careful as coconut flour pancakes burn very quickly and easily so pay attention! For me it took about 2-3 minutes on each side and it may be different depending on the type of stove and pan used so be careful.
# Let's Eat!
Once you've finished the rest of the batter, it should make about 3-4 pancakes in all depending on your sizes and so on. You can pair it with anything you like such as honey, agave, butter or maple syrup! It also serves well as a multipurpose bread to eat with many things! The world is your oyster!
