I recently read a post (I can't remember who wrote it) on Kvass. I decided to do a bit of research on our good friend Google, as it looked like an interesting drink to me. There is a lot of information on Kvass and a number of recipes and variations on the drink. I decided that I wanted to try and make the traditional **Rye Bread** Kvass!! (I am also busy with a batch of Beet Kvass, on which I will post later.) To make the Kvass, is actually very easy!! You basically bring a pot of water to the boil, take it off the heat, add some toasted Rye bread and raisins, leave it overnight, strain out the bread and raisins, add some sugar, yeast and new raisins, and leave it for about 8 hours to ferment. After fermenting, you strain it again and cool down to drink!! [
