Morning Breakfast : Fermented foods Idli and Jalebi

Fermented foods are good for health as the probiotic bacteria and enzymes present in it helps in many ways like it improves intestinal flora, increases the health of the gut and digestive system and also helps to enhance the immunity. There are various fermented foods popular in different cultures. In India, South Indian fermented food like Idli and Dosa are the most popular and in North India Jalebi is very popular. Today in the breakfast I had both Idli and Jalebi. A combination of North and South Indian food. ___

___ **Idli** It is prepared by fermented batter of rice and lentils (In the ratio of about 3:1). The batter is steamed cooked in Idli moulds. It is served with Sambar and coconut chutney. **Jalebi** It is prepared by fermented batter of refined white flour. A thick paste-like fermented batter is fried in a spiral shape in oil and soaked in sugar syrup. In both cases, no starter for fermentation is required. Just keep the batter at a warm place for 12-24 hours and fermentation takes place. It is a misconception that curd is required for its tangy taste but it is not true. ___ ####
