*[Source](https://www.foodandwine.com/recipes/quinoa-salad-with-sumac-and-preserved-lemon-dressing)* Quinoa is the new in thing these days when it comes to the healthy choice. Some people are choosing quinoa over white or brown rice. I've been buying it from the trays at the natural food stores and it's been a pleasant surprise. The way they prep it with a bunch of fresh herbs is what I like the most. The quinoa seeds are rich in protein, fiber, B vitamins, and dietary minerals greater than in many grains. It's really good for you that is how I first found it. The quinoa plant is more similar to beetroot and spinach. People can eat both the seeds and leaves, a very versatile dish. Mixes well with pasta and potatoes from my experience.
