* Huevos Rancheros is a dish I like to order when I go out for Mexican food on the early side. Most Mexican restaurants typically open around 11:00 AM, but I found one around the way that sometimes opens early without an announcement. Best served with corn or flour tortillas, a side of avocado and a cup off coffee, maybe a beer depending on what time it is. Love the spice and the mixture of rice and beans coated with the egg yolk. I remember having good times centered around this dish a few summer's ago. It was one of my go to meals. The waitresses all seemed to cater to us because we enjoyed those early visits so much. Good times.
