Following a health scare this week which I shared with my #silverbloggers community in How fragile is life, I was advised to make some serious dietery and lifestyle changes; like getting enough sleep and changing from a high fat diet to a healthier way of eating as well as doing some form of exercise like going for walks.

Life's been hectic ever since my 89 year old Mom fractured her ankle, and of course I've neglected my own health as well as chosen easier meal options, which often were high carb and high fatty meals; NOT GOOD!


Following my health scare, my son who lives a six hour drive away from us, ordered enough food for us for two meals, but went for healthier options although he still could not get away from the crumbed calamari and fish. He ordered veggies with it (no potato fries) and I made Lettuce wraps with the seafood; it was really good as I was not up to cooking last night.

However, what I'd like to share with all our foodies tonight, is how to make a healthy teatime or breakfast treat, that is really scrumptious.

Cinnamon Apple & Carrot Wholemeal Muffins

Ingredients required:

Beat together:

  • 3 Eggs
  • 100ml Canola Oil
  • 150ml Maple Syrup
  • 100ml Apple Juice
  • 1 tsp Vanilla
  • 5ml Baking Soda dissolved in 2 Tbsp Milk

Mix the following dry ingredients together with a whisk & fold into liquid ingredients

  • 500ml Wholemeal Flour
  • 5ml Baking Powder
  • 2ml Salt
  • 5ml Cinnamon

Add the following & mix till well blended:

  • 100ml Pecan Nuts, chopped
  • 2 carrots, grated
  • 1-2 Granny Smith Apples, grated

Spoon into sprayed muffin pans, top with some Almond Flour or shredded Coconut & bake for 20 min at 180°C.

Remove and cool on wire cake racks.

Serve with homemade preserves or honey as a breakfast or teatime treat, and look after your health, we only get one chance in this life.
