So I've been back in lockdown for the past couple of weeks and this time around, a bit down in the dumps, but NOT because of lockdown, but because something that I had worked so hard on for so many weeks was completely rejected (so thank Dog for lockdown actually...) and as you know, when you're down in the dumps, your food intake isn't as healthy as it should be, so stumbling upon the cooking shows on youtube last night, revived my need to eat good food and inspired me to do an experiment.

And I ended up with a truly delicious and highly nutritional almost Vegan pie.
Knowing that Kumara- or Sweet Potato as many people know it, has such a huge amount of nutrients, I opted for this and always stay right away from white potatoes.
I also had a bit of a hankering for Silverbeet, Eggplant and Zuccinis too.
I cheated on the pastry though- pastry, breads and even lasagne sheets and pasta are all made of flour and water as their base, so I opted for not only the cheapest, but also the tastiest and biggest to line the tray in- and that was Lebanese round bread- usually used for wraps.
Then I layered thinly sliced Kumara, Zuccini, Eggplant with big green leafy silverbeet, full of antioxidants, vitamins K, A, C and lower levels of the B complex, along with minerals including magnesium, manganese, potassium, copper, calcium and iron. https://barfaustralia.com/en-au/nutrition/ingredients/silverbeet
and sprinkled on Spanish Onion and topped it off with 4 bean mix (Butter, Red Kidney, Baby Lima Beans and Chick Peas) and green peas and cooked it in a Laksa Soup mix and added Coconut Cream, Almond milk, Lemon Pepper, Garlic and Garlic salt sauce.

And this is why it is not quite Vegan, but oh so close.... for unfortunately the Laksa soup mix has milk protein and Fish Sauce Powder....Otherwise Everything else is free from animal cruelty, including the pastry that I topped it off with- as it's made from margarine, not butter.
And voila! My delicious veggie pie, full of delicious nutrients and no abuse and murder.
And now I've got portions in the fridge and freezer to go!
