Roasted Cauliflower, Mushroom, and Wild Rice Stuffing

*Source* This is for all those vegetarians out there who feel Thanksgiving slowly approaching. I'm sure it must be hard seeing the turkey and the other meats this time of the year. But here is something I found that I'm going to try making here in the next few weeks. It's a gluten free dish, and according to the recipe it's really simple to make a big batch that will serve a large group. First a trip the organic market. The ingredients are as follows; olive oil, white onion, garlic, wild rice blend, vegetable stock, lemon, small head of cauliflower, bella mushrooms, dried cranberries, chopped fresh parsley, freshly-grated Parmesan, and toasted pine nuts. All things extremely good and healthy for the mind body and soul. Will definitely have to try this out sooner than later.
