## Cooking

Place the pan in an oven preheated to 220 ° C for 25–35 minutes. The cabbage should become soft and brown on the edges. Turn the inflorescences in the middle of the preparation. In a saucepan, heat the remaining olive oil over medium heat. Put onion cubes and add salt. Stir fry for a few minutes. Add finely chopped garlic and cook for another 30 seconds. Pour in the broth. Leave some of the most beautiful slices of cabbage for serving, and put the rest in a saucepan. Increase the heat slightly and bring the broth to a boil. Then reduce and cook for 20 minutes with a small boil, stirring occasionally. Mash the prepared soup with a blender, adding butter, lemon juice and nutmeg. Salt the dish to taste. Before serving, decorate each serving of soup with a slice of cabbage and chopped herbs.
