A Healthy Vegetable Soup For Cold Days - Fruits And Veggies Monday

Hello everyone, it's been ages since I've posted for #fruitsandveggiesmonday created by my dear friend Lena, @lenasveganliving, but today here I am, posting a recipe of mine that I like no matter the season.

It's a simple vegetable soup that can be made all year round as the ingredients are available all year. It's easy to do, it's ready in half an hour and very healthy.

Ingredients: - 3 big carrots, - 2 onions, - 2 garlic, - 500g potatoes, - 3 tablespoon rice, - 2 tomatoes, - 1 bell pepper, - fresh parsley, - plant based milk, - salt, - pepper, - vinegar. Clean and mince the vegetables, onions don't need mincing. Add the vegetables to the boiling water except tomatoes, add salt and pepper and let it cook until it's tender. Add tomatoes, let it cook for another 5 minutes and it's ready. Add some plant based milk (optional) and vinegar.

I have confession to make. The recipe says two tomatoes which you can buy at every supermarket but please don't do that. What you can buy at the supermarket is basically useless here as after you peal them, there's nothing left because those are not properly ripen. Instead use canned tomatoes that are perfect for the job. During summer you can buy real tomatoes from the farmer market. I hope you're going to try this soup one day :) It's delicious!
