While there are infinite reasons life in our ecovillage is awesome, daily salads are a seriously excellent feature!
Our greens are abundant and plentiful! The types of greens we grow vary based on the seasons; we are currently enjoying a bounty of kale, collards, mustard greens, lettuce, broccoli rabe, turnips, dandelions, and herbs.
Year round, they grow beautifully in our tire raised beds.
We even eat the "weeds" that pop up along the path and throughout the property! Lamb's quarter and henbit are two particularly healthy and prevalent wildcrafted greens we enjoy.

We nurture our greens with fresh air, sunshine, well water, and dank compost. In the winter, we cover them with tarps to keep them warm in a simple greenhouse.
Every single day, we are blessed with as many greens as we care to eat!
Our inhabitants love salad, so we make magnificent masterpieces every day. No two salads are ever exactly alike!
Some days, we make huge salads for sharing.
Other days, we gather yummy ingredients and make wraps. In fact, our @everlove is famous for her mouthgasmic style of "19 things on a leaf covered in sauce".
Greens are a super duper superfood, as the disease-fighting plant compound chlorophyll has almost the exact same structure as blood's hemoglobin. This is how we alchemize light into nutrition!
