The storage jar of dates would probably be in most people's pantries for cooking cakes and slices as well as eating for the quick snack. But do we take the date for granted? Perhaps we do because they have always been there, available in supermarkets either in packets in the cooking aisle or as fresh organic ones in the veggie/fruit section. Not to forget the organic food markets for the purchase of the many different fresh kinds of dates. Always a choice for the shopper!

While the good old date has always featured in my entire life I have never paid much notice to its health benefits at all. I have been happy to just eat handful of dates, date cake and even on sandwiches when I was a kid. They are sweet and easy to eat, which is probably the reason I liked them. I have always known that dates come from flowering palm trees found in a lot of hot countries. The dates have long been a stable food source in the Middle East. Now I know more through doing a bit of reading online. The numerous health benefits are boundless. Dates are highly nutritious and a plus for overall health, full of vitamin K, A and B6, good for bone development, digestion and eye health. I know people eat dates to help reduce their cholesterol and to aid intestinal health. Dates are also known to reduce the risk of stomach and colon cancer. The benefits are boundless. If one eats dates regularly their body is naturally receiving a healthy dose of minerals like magnesium, calcium, iron, potassium, folate and niacin, all of which assists in the general functioning of the body. It sure beats swallowing tablets. I will keep eating my daily supply of dates through my yummy date cake. It is moist, tasty, healthy and wholesome. My cake recipe is simple and even simpler to make. It comes highly recommended if you are a date eater. - Chop 3 cups of dates and melt in a saucepan with 1 cup of water. Add 1 teaspoon of bicarbonate soda after the date mixture simmers for 3 minutes. - When cool, add 3 lightly beaten eggs, 2 tablespoons of ginger powder, 1/2 cup of chopped glace ginger, 1/2 chopped walnuts and 1 cup of SR flour. Stir lightly. - Pour into a greased cake tin and cook in a slow oven for 2 to 3 hours. - Leave in tin covered with a tea towel for several hours.

Cheers and Blessings
