It’s time for a Keto update! For those of you just joining me on this journey I will include links to my previous Keto posts at the end. In short, a Keto diet is when your body uses a different type of fuel. Instead of your body relying on sugar that comes from carbohydrates, it relies on fats. The body then turns these fats into ketones for use as energy (ketosis). The result from living a Keto lifestyle is having more energy, alertness, more focus, weight loss, clear skin, reduced cravings, reduced blood sugar levels and more. I am such a snack head. I love eating in between meals and I always grab a snack before I sit down to crochet. I was struggling with cravings so I had to find snacks I could have that wouldn’t get me out of ketosis. My sister in law recommended I tried this Rebel ice cream and I’m so glad she did. It is so delicious and you won’t believe it doesn’t have any sugar added. As you see it has only 7 carbs in this one pint size serving. It really is a yummy treat and I can eat the whole pint in one sitting without feeling guilty. You can order it online if your nearest grocer doesn’t carry it. Rebel ice cream is now one of my go to Keto staples! I enjoyed the cookie dough but so far my favorite flavor is strawberry. The other available flavors are peanut butter fudge, mint chip, butter pecan, coffee chip, chocolate and vanilla.
When looking at labels I don’t focus on the calories. My main goal is to stay away from high sugars and carbohydrates. I am learning that when you see sugar alcohol on a label, you can subtract that amount from the total carbohydrates. This is because sugar alcohols are not completely absorbed by the body and normally do not impact blood sugar levels.

*More Snacks*
The Atkins and Keto diet are very similar in that they both focus on consuming less sugar and carbohydrates so the body burns fat, including body fat for fuel. These Atkins snacks are low on carbs and sugars and taste so great! I really don’t miss the sugar rush from eating a Snickers because this caramel chocolate nut roll bar taste must like it. It doesn’t leave me feeling sluggish like a regular candy bar would. I think it helps that I’ve been on Keto for awhile now and have trained my taste buds to enjoy less sugar. The chocolate covered almonds are really good too. My kids tasted them and wanted more.
Sometimes I eat the white chocolate macadamia nut bar for breakfast alongside my butter coffee. I’ll talk about how I make my coffee in a later post. It’s really light and doesn’t weigh down on my stomach. I like eating the chocolate candies as a treat after dinner. I am really glad that I found these Keto friendly snacks that I can enjoy guilt free! Sometimes I forget they are Keto friendly because they taste so good. I will be trying out more of these Atkins snacks.

*New Staple Meal*
In my update posts I like to share the meals I have made. Some make it to our staple list and some don’t. Well this meal certainly made the cut! This Parmesan Meatball Casserole was a huge hit! Two of my children didn’t love it but the majority of the family did and would like to have it again. The meatballs are pretty feeling so I didn’t need to have too many. The melted cheese on top was so delish!!! I decided to make cauliflower rice to go with it...
This is really easy to make and is a satisfying replacement for rice. All you do is cut up the cauliflower in chunks. Use your processor to chop it up (in small batches) until it resembles rice. Then sauté it in oil, adding salt and pepper until it reaches your desired consistency. It went really well with the meatballs. My sister mixes hers with broccoli, I think I’ll try that next time.
I do not like how sluggish I feel when I am out of ketosis. I can really feel the difference now that I’ve been doing it for awhile. My energy levels drop and I just want to nap all day lol. If I find myself off track I just pick back up where I left off. Living this lifestyle makes me feel good about myself, more healthy and vibrant. I am able to keep up with my kiddos and feel empowered to get things done! That’s all for now :) ####
